Toddler Oatmeal Cookies - No Added Sugar

Ingredients:

    •    1/2 cup pumpkin purée (or substitute with one of the options below!)

    •    1/4 cup plain yogurt

    •    2 tbsp unsweetened almond milk

    •    1 egg

    •    1 tsp vanilla extract

    •    1 tsp cinnamon

    •    1 cup rolled oats

    •    1/2 cup whole wheat flour

    •    1/2 tsp baking soda

Instructions:

    1    Preheat oven to 350°F and line a baking sheet with parchment paper.

    2    In a bowl, whisk together pumpkin purée (or substitute), yogurt, almond milk, egg, and vanilla extract.

    3    Stir in cinnamon, oats, flour, and baking soda until well combined.

    4    Scoop small spoonfuls onto the baking sheet and gently flatten.

    5    Bake for 12-15 minutes until set and slightly golden.

    6    Let cool completely before serving.

Pumpkin Substitutes:

If you don’t have pumpkin on hand, you can easily swap it out for another nutritious option:

    •    Mashed banana – Adds natural sweetness and a slightly softer texture

    •    Unsweetened applesauce – Keeps the cookies moist and mild in flavor

    •    Mashed sweet potato – A great nutrient-dense alternative with a similar texture
